If you want to experience Vietnamese cuisine at its best, you need to do a cooking class!
We chose the Red Bridge half-day cooking class which included a guided tour of Hoi An’s colourful central market, a boat trip on the river and a 2-hour cooking class.
The market was amazing! Our guide introduced us to the locals, explained how to choose fresh fish (shiny skin, clear eyes) and gave us tips on picking the right herbs and spices for Vietnamese cooking.
After a short boat trip, the talented Red Bridge chefs demonstrated how to make the dishes before the class got underway. They had excellent English and kept everyone entertained.
Throughout the day we made:
– Crispy Hoi An Pancakes with Shrimp, Herbs, Bean Sprouts & a Peanut Sauce (delicious!)
– Seafood Salad with mixed Vietnamese Herbs served in Half a Pineapple (made by the Red Bridge chefs)
– Fresh rice paper rolls with scrimp
-Vietnamese Eggplant in Clay Pot, which we later ate at the Red Bridge restaurant
We also learned how to make a ‘tomato rose’ & ‘Vietnamese cucumber fan’ (our attempt pictured!).
